Red Velvet Whoopie Pies, Homemade

Red Velvet Whoopie Pies:
2 1/4 cups (295 grams) all purpose flour
1/4 cup (30 grams) Dutch-processed cocoa powder (can use regular unsweetened)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup (170 grams) unsalted butter, room temperature
1 cup (200 grams) granulated white sugar
1 large egg, room temperature
1 teaspoon pure vanilla extract
3/4 cup (180 ml) buttermilk
1 tablespoon liquid red food coloring
Cream Cheese Filling:
1/2 cup (113 grams) unsalted butter, room temperature
1 - 8 ounce (227 grams) cream cheese, room temperature
3 cups (345 grams) confectioners' (powdered or icing) sugar, sifted
1 teaspoon pure vanilla extract

The Process
I'm not good at baking, but really interested to know how to make wonder with flour and eggs. AND, I also got help from Chef Alex, aka BF, aka chef-to-be, and the end product turns out well. Btw, I was disappointed when I realized that red velvet cake is just cocoa. The red comes from colouring, and when vinegar and buttermilk reacts with cocoa, it further enhance the red. I thought red velvet was some other flavour like "paddlepop rainbow"! Sad, but yeah...
Anyway, my red velvet turned out cocoa colour, did not add enough colouring I guess.

3/4 cup (180 ml) buttermilk
1 tablespoon liquid red food coloring

So here it is, fresh from the oven! This is how it looks
This is my first whoopie pie. Ate it and was really happy! Then I accidentally put it into the bowl with water in it. And there goes my first whoopie pie... :(
The second Whoopie pie made was for my dad.

And then, storing them up for my bro, sis and mum to try!
So...yeap.... To me, the texture of the whoopie pie was a lil too creamy and mushy. It was definitely moist and was not too hard. But because of that, I don't know... It was just a lil weird for me, can't explain in words. But the cream cheese was awesome!!! When eaten together, it just tastes superb! But I think it's a lil too sweet. The cream cheese had 330g of icing sugar in it... For sweet tooth like myself, it was just nice, however, for my dad and sis and bro, they say it was too sweet... Lol...
